Berry Splash

I will admit I am not very good all the time at knowing what goes with what when it comes to making the perfectly balanced meal... but I have noticed it is always nice to have a small fruit side for splash of color and just a bit of sweet goodness. This is what came:) Enjoy!

Berry Splash

  • 2 Cups of mixed org berries
  • 1/2 C of org coconut cream or organic kefir or Greek yogurt
  • 2 tbsp chia seeds
  • 1 tsp org lemon or lime juice
  • dash of org local honey

Enjoy to the side of any fresh meal:)

This has been a topic I have been pondering, studying and learning from. Most of my life I struggled with my innate self worth, and what I didn't understand. I had it all along and was just trying to understand the mold everyone else was living. Where does your worth come from?

My Body, Hair, Eyelashes etc...
My Temporal things
My worldly accomplishments
Etc...

Your Self worth is divine. You came from Heaven with it, you are a literal son or daughter of Divine..it was a gift given. Here on earth we use our divine worth to explore, learn, grow, develop and to slough off the natural man tendencies and the worldly definitions of worth. You have worth..just the way you are and you are a beautiful soul learning, growing, stretching and creating new every day.

Windowsill Herbs

If you don't have your own greenhouse or your lazy like me, and don't want to take a trip to the garden just to get a spring of herb in a dish your creating..an easy alternative is to place your favorite herbs in your windowsill inside your home. If you live in a four season climate like I do, you can still have fresh warming herbs like rosemary and oregano even in the winter months.

Sprouting is an easy way to get optimal nutrients and more easily digested food. Below I have attached a chart that helps you see how long to soak different seeds nuts and grains and how long to germinate them in your sprout trays. Most are as simple as soak over night and rinse for 2 days then ready to eat top of your favorite salads soups and wraps.

Roasted Radishes

According to Chinese Medicine, radishes are excellent for damp-type conditions. And cysts, endometriosis, fibroids and PCOS are all examples of dampness. Radishes act as an astringent, so it’s great for water retention and candida.

Roasted Radishes:

 ingredients 3 bunches radishes (small to medium)
1 cup of snap peas
 3 medium sized carrots
1 tbsp coconut oil
2 tbsp fresh thyme
Juice from half a lemon Salt & cracked pepper

INSTRUCTIONS:
 Preheat oven to 450. Place radishes and carrots on a baking sheet and toss with oil, thyme, salt and pepper. Roast until tender but firm – roughly 20 minutes. Squeeze with a little lemon juice and serve. Serves 3-4 (One serving size is 1 cup)

Veggie Boost

Being a Mom is a busy job, so when kids get ill or just need a good fast veggie mineral boost... we make a blender soup...Enjoy!!


Saute:
1 leek slightly chopped 
8 spears asparagus
2 inch slice of cauliflower
Add fresh:
3 C garden tomatoes
1 red bell pepper
4 stalks celery
2 org carrots
1 inch slice cabbage
2-3 tsp real salt
1 tsp rosemary
1/2 tsp oregano
1/2 tsp thyme
1 tbsp garlic
juice half lime
1 C Organic Pacific Veggie Broth
1 avocado
1 C Org coconut unsweetened almond or coconut milk
1/2 C good oils (avocado, olive,coconut or udos)
Place all ingredients in a Blendtech or Vita mix and blend until warm.

Rainbow Salad

A salad isn't a salad unless it looks like Art. My mom taught me to use many colors to make a salad not only a meal but beautiful to look at:)



Bowl of Greens (kale,spinach,chard,arugula,spring, collards whatever you prefer:)

Shred,Chop and top with the following veggies:

cucumber
beet
jicama
celery
bell peppers
radish
cauliflower
carrot
squash zucchini
alfalfa or broccoli sprouts
any other veggies you desire

Other toppings:

Soaked Almonds,walnuts,pumpkin,sunflower or any other nut or seed you prefer
Sprouted beans are also yum
Avocado
Green apples,wedges of grapefruit etc..
dried cranberries, gogi or other fresh or dried berries

Dressing:

Drizzle with:
Olive, Avocado or good Omega oil
lemon,lime or grapefruit squeeze
A dash of real or sea salt
A hint of cayenne for a kick:)

Enjoy with an Almond or Teff Tortilla and a bit of cashew spread.

Avo Pudding

This is a recipe adapted from my mothers years of hard work in the holistic culinary arts. Love you Mom:)

Avo Pudding


1 avocado
2 scoops Vegan Protein powder
3 tbsp organic Cocao powder
3 C organic Almond milk
dash of cinnamon
1 tsp maca powder
1 tsp organic chia seeds
1 tbsp coconut oil
cup of ice

Blend until smooth pudding consistency,top with coconut,berries or favorite nuts and seeds..Enjoy!

Acai Yum

Here is a fun yummy way we like to make our Acai bowls for the Morn:)




In a blender mix together:

14 oz Acai berry juice
1 C organic frozen mangos
1 C organic frozen blueberries
1 organic avocado or banana
1 handful spinach or collards
1 tbsp organic Chia seeds

Pour into small bowels and top with any of the following:

organic coconut flakes
fresh organic berries
gogi, mul, golden or cranberries
Organic coconut cream (rain forest brand)
slivered almonds or other nuts and seeds you prefer

Almond Sun Fillet

This is a recipe adapted from Melissa Ramos. Fish is good in moderation in times of extreme
fatigue and hunger. Fish is great for women. It may balance out hormones due to the content of good DHA oils and natural calming occurring B vitamins. Remember eat sparingly and keep most of your diet fresh organic produce:)




Almond Sun Fillet


 1 piece of wild salmon

 1 tbsp org mustard powder
1 tbsp avocado oil
1 tbsp org coconut flour
1 tbsp org almond flour
3 tbsp coarsely chopped unsalted org sunflower seeds
2 tbsp fresh org parsley
 Zest from one lemon
 Salt & Cracked Pepper
top with slivered almonds

  Preheat oven to 450. Begin by adding avocado oil on salmon and then sprinkle with mustard powder on top. Mix the rest of the ingredients in a small bowl and top over the salmon gently padding it down. Bake in the oven for 15-20mins
* Remember ... One protein serving is the size of the palm of your hand!

Cocococao balls

This recipe I love for that time of day when you and the kids feel a little drowsy.

1/2 C organic coconut oil
2 tbsp Org cocao powder
1 avocado
1 tsp chia seeds
1 Tbsp maca powder
pinch of real or sea salt
1 tbsp favorite greens powder
3 tbsp org unsweetened coconut shreds
(opt.) 2tbsp coconut palm sugar

Place ingredients in your processor and blend until thick dough like consistency. Roll mixture into bite size balls and then roll balls in a bit of coconut. Place in freezer of fridge and Enjoy!

Cashewza...Pizza



















This is like Pizza...but not..its better... so Yum!

Cress Arugula Cashewza

1 pkg gluten free Almond flour tortillas (or you can make your own or cauliflower crusts)
Bunch of arugula and water cress
1 batch cashew cheese
1 batch pesto
1 red onion (sauteed in grape seed or avocado oil)
broccoli sprouts
tomatoes (or sun dried)


Cashew Cheese
1 Cup soaked cashews Or almonds
2 tbsp water
1/2 tsp garlic powder (or one garlic piece)
1/2 tsp pwdr org mustard
1/4 tsp powdered ginger
1/2 tsp sea salt
2 tbsp org olive or avocado oil

Blend all ingredients in processor until smooth and creamy:)

Pesto
1/2 C soaked almonds
1/2 C soaked pumpkin seeds or pine nuts
bunch of parsley
bunch of basil
1/2 tsp sea or real salt
1/2 tsp powdr garlic or 2 fresh sauteed garlic cloves
1/4 tsp lemon juice
*if buying a pesto make sure its dairy free:)

Spread cashew cheese and pesto(opt. raw tomato sauce) on tortilla. Top with sauteed onions, olives,tomatoes,arugula,watercress,avocado and broccoli sprouts. You can also top with a rich raw tomato sauce(recipe in pHmiracle book)...Enjoy!

Morning Shake

Our family always has shake together in the morn..but, this is our family favorite:)

1 C coconut Water
1 English cucumber washed
4 stalks celery w leaves
1 avocado
2 tbsp chia seeds
juice 3 limes/or lemon
1/2 grapefruit peeled
1 C org frozen berry mix
1/2 org granny smith apple
Handful soaked almonds
handful of spinach/collards/kale
1 tbsp coconut oil
mint leaves and dash sea salt
1 scoop great lakes gelatin (good for skin hair nails muscle and ligaments)
opt. 1 tsp inositol or E3 (for brain),chlorella or chlorophyll or powdered greens (build blood)
Ice

Blend in vita mix or blendtec and enjoy as a family:)

Calm Balls

These balls are a guilt free sweet treat that everyone needs from time to time. They are gluten, dairy and sugar free. It contains org matcha powder which has natural l-theonine which may produce a  natural calming effect or be good for anxiety, and raw org cocao that contains natural magnesium, great for that time of month when your natural magnesium levels drop making you feel anxious and irritable...eating coco in a better way:)



1/2 C org crunchy Almond butter
1 tbsp org matcha powder
1/4 c org cocao powder
1/2 c raw dates pitted and soaked in water for 10 min.
1 tsp org non alcoholic vanilla (frontier brand)
1/2 tsp org coconut oil
dash of sea salt

Mix in processor till thick pasty consistency. Roll paste into balls, then roll in some matcha powder. Store in fridge. Enjoy!

Kids Power Breakfast

When the kids have testing at school or just need to up the nutrition before school this recipe I go to often:)

Buckwheat Cakes

2 Cups raw org buckwheat
2 tbsp raw flax seed
2 scoops Color earth vegan protein powder (found at colorearth.com)
1/2 tsp bake powder
1/2 tsp bake soda
1/2 tsp real salt
1 tbsp avocado oil
1 tbsp coconut oil
3 Cups or more of desired milk (Almond, Soy or Coconut)

Blend all dry ingredients in the vita mix first then add the wet until pancake consistency.

We like to serve with fresh chia berries and org coconut cream:) Enjoy!

Chia Jam:
2 C fresh or frozen organic berries
1 tbsp fresh lemon juice
4 Tbsp coconut sugar
Mash ingredients together and serve fresh..will stay good in the fridge for about 4-5 days.

Coconut Cream:
Pure Organic culinary coconut cream from your local health food store/Native forest or So delicious:)
